Tis the season for baking! Im a huge fan of really crunchy cookies that make the house smell amazing for hours, which can only mean one thing: Gingerbread cookies. I like to make my ginger bread cookies a bit healthier with all organic ingredients, whole wheat flour and real ginger. Once the house starts smelling magical the whole family will come running to the kitchen and thats when the really fun part starts: decorating. They don’t have to be perfect just made with love.

Gingerbread

2 cups whole wheat pastry flour

2 tsp ground ginger

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground cloves

1/4 tsp baking soda

1/4 tsp salt

1 tbsp grated ginger (peel first)

1 stick of butter

1/3 cup dark brown sugar

1/3 cup unsulfured molasses

1 large egg

1. Mix together flour, spices, baking soda and salt. In a separate bowl blend butter, real ginger, molasses, egg and brown sugar with an electric mixer until smooth. Then combine with flour mixture.

2. Wrap dough in waxed paper and sit in fridge for 1-2 hours.

3. Pre-heat oven to 350 degrees. Roll out chilled dough and cut gingerbread men out.

4. Once all gingerbread men are cut, place uncooked cookies in fridge for 10 minutes to help keep their shape.

5. Bake for 10 minutes. Then let cool for 20 minutes.

6. Have a blast decorating them!

Cream Cheese Frosting

4 ounces cream cheese

1 stick of butter

2 cups powdered sugar

1 tsp vanilla extract

1. Blend all ingredients with electric mixer until smooth. Yum.
